¡Sí! Puedo Comer Comida Mexicano!

¡Sí! Puedo comer comida Mexicano!  I think that means, “Yes! I can eat Mexican!” in English.  At least, that’s what google thinks anyway.  Since I’ve had to make this diet adjustment, going out to eat at my favorite restaurants has been the most difficult part.  In my hometown, like many small Alabama towns, we have a few really good Mexican restaurants and if you have kids, they love to eat there!  In Troy Alabama, Monarcas is on the short list of choices for lunch after church, supper after ballgames and any other excuse to go out to eat with family and friends instead of cooking a meal at home.    

For years, I have not worried about the amount of tortilla chips and salsa I consumed while waiting on my order of high carbs with rice and beans on the side.  When I left, I was full and that was all I cared about anyway.  I recently went there for the second time since my Type 2 diagnosis.  The first time, I ate a few chips and a grilled shrimp salad.  The 15 or so chips I ate caused an unwanted spike in my bg levels.  The second time I went in I decided to skip the chips.  It wasn’t easy.

I didn’t document the first meal but I did when I went back.  I didn’t eat a single tortilla chip and here’s what I ordered with an unsweet tea:

I ordered a combination grilled chicken/grilled shrimp fajita dinner.  I asked the waiter to omit rice, beans, and the flour tortillas.  This was delicious and I didn’t miss the rice and beans for one second.

I did get this guacamole salad on the side.  So far so good!

My results

The FreeStyle Libre log shows no significant spike in my bg levels after eating low carb fajitas!


This is good news.  While I don’t plan on eating Mexican food as much as I used to, It’s nice to know that I can order this meal next time I go. When I left I was full!
