Boston Butt Salad

The strategy here is to plan my meals and eat what I plan.  Well, like everyone else, sometimes you have to improvise.  Today I found myself stopping by home on my lunch break in order to pick up something for an errand.  I decided to take a moment and throw something together.  We had some Boston Butt in the fridge that, as we say in the south, “needed eating,” so I built a simple salad around that.  

This is a simple salad made from Boston Butt, broccoli, shredded lettuce and shredded cheese.  I probably could have added tomato and bell pepper but that would have required slicing and chopping and the other ingredients were already ready to go.  I dressed it with Greek vinegar dressing, mustard and hot sauce. 

How was it?

Well, it’s slow cooked pork.  It’s delicious!  That’s a given.  It was really nice to be able enjoy this meal as a low carb variety.  Normally, Boston Butt is eaten with baked beans, bread and whatever other carbohydrates that are available to fit on the plate.  Of course, this meat could have been enjoyed in a sandwich as well.  I will add this, after I ate this salad I was full.  No bread or baked beans needed.

My results

As expected, there was virtually no moment in my blood glucose level after eating this salad for lunch.  While pork isn’t exactly a healthy meat to eat, this was the best I could do in a pinch.  Let me know what you think in the comments. Thanks!
